When it comes to ingredients, less is more. Today’s consumers are increasingly looking for ingredients with names they recognise. As a result, around one in four new products launched across Asia Pacific today are described as “clean label”. In such an environment where transparency is important, industrial bakers need to be nimble.
Retailers are requiring e-free bread with natural colours and without additives or preservatives. Consumers also expect information on ingredient sourcing and sustainability as they search for more “authentic” and “real” foods.
